ABSTRACT Background: The nutritional quality of diet may influence the risk of colorectal cancer (CRC). This study compared the Index of Nutritional Quality (INQ) of various dietary components between colorectal cancer patients and healthy controls. Methods: A total of 480 participants were enrolled in the study (160 patients with colorectal cancer as a case group and 320 healthy control). An analysis was conducted on the general characteristics of the participants, their medical histories, anthropometric indicators, physical activity, alcohol consumption, reproductive history, smoking and food intake. A valid food frequency questionnaire was used to assess nutrient intake and INQ was calculated from daily nutrient intake. Results: A Significant inverse association was found between CRC and INQ for vitamins A (OR=0.01, CI: 0.01-0.01), K (OR=0.04, CI: 0.01-0.15), and B12 (OR=0.71, CI: 0.51-0.98), B5 (OR=0.43, CI: 0.00-0.01), zinc (OR=0.35, CI: 0.13-0.95), and phosphorus (OR=0.17, 0.19-0.94). The association between the INQ of vitamin B12 and zinc with colorectal cancer was disappeared after age adjustment. There was a significant negative association between CRC with the INQ of vitamins A, K, B5, phosphorus, and calcium after further adjustments for gender, BMI, menopausal status, and total energy intake. Conclusion: CRC is significantly associated with INQ for some micronutrients. INQ can be considered as an indicator to assess clinical nutritional problems.


RESUMO Contexto: A qualidade nutricional da dieta pode influenciar o risco de câncer colorretal (CCR). Este estudo comparou o Índice de Valor Nutricional (INQ) de vários componentes dietéticos entre pacientes com CCR e controles saudáveis. Métodos: Um total de 480 participantes foram inscritos no estudo (160 pacientes com CCR como um grupo de casos e 320 controles saudáveis). Uma análise foi conduzida sobre as características gerais dos participantes, seus históricos médicos, indicadores antropométricos, atividade física, consumo de álcool, histórico reprodutivo, tabagismo e ingestão de alimentos. Um questionário de frequência alimentar válido foi usado para avaliar a ingestão de nutrientes e o INQ foi calculado a partir da ingestão diária de nutrientes. Resultados: Associação significativa entre CCR e INQ para as vitaminas A (OR=0,00, IC: 0,00-0,01), K (OR=0,04, IC: 0,01-0,15), B12 (OR=0,71, IC: 0,51-0,98) houve uma associação negativa), B5 (OR=0,43, IC: 0,00-0,01), zinco (OR=0,35, IC: 0,13-0,95), fósforo (OR=0,17, IC: 0,19-0,94). A associação entre o INQ da vitamina B12, zinco e CCR desapareceu após o ajuste pela idade. Houve uma associação negativa significativa entre CCR e INQ de cálcio, e outros resultados não mudaram após ajustes adicionais para idade, gênero, Índice de Massa Corporal, estado de menopausa e ingestão total de energia. Conclusão: CCR está significativamente associado ao INQ para alguns micronutrientes. O INQ pode ser usado como um indicador para avaliar problemas nutricionais clínicos.

SUMMARY OBJECTIVE: The aim of this study was to evaluate the consumption of ultra-processed foods by Brazilian pregnant women and its association with the nutritional quality of the diet. METHODS: This is a prospective and cross-sectional study with food consumption data of Brazilian pregnant women from the 2017 to 2018 Family Budgets Survey (Pesquisa de Orçamentos Familiares). Food consumption was measured using two 24-h food recalls, and the foods were categorized according to the NOVA classification. The averages of absolute and relative energy consumption for each of the NOVA groups and subgroups were estimated. The sociodemographic characteristics described the diet's caloric contribution of ultra-processed and non-ultra-processed food fractions. Linear regression models were used to describe the association between quintiles of the caloric contribution of ultra-processed foods and the average content of nutrients in the diet. RESULTS: Consumption of ultra-processed foods represented 20.9% of the total calories in the diet of Brazilian pregnant women. There was a higher energy contribution of ultra-processed foods in the diet of pregnant women living in urban areas (22%), with higher per capita income (23.7%), and in the south region of the country (26.9%). In addition, the data showed an association between higher consumption of ultra-processed foods with reduced intake of protein, carbohydrate, fiber, potassium, iron, zinc, and folate and increased intake of total fat, saturated fat, trans fat, and free sugar. CONCLUSION: Results show that higher consumption of ultra-processed foods is associated with a reduction in the nutritional quality of the diet of Brazilian pregnant women.

Abstract: Evidence points to a direct relationship between nutritional quality and food expenditure. However, food expenditure is highly susceptible to changes, and nutritional quality of household food presents limited evidence. The aim of this study was to assess the relationship between nutritional quality available and total food expenditure in Peruvian households, and whether there were differences by area (urban and rural) and between years of the COVID-19 pandemic. For this, we used Peru's National Household Survey (ENAHO) from 2019 and 2020. We assessed total food expenditure in US dollars per day, whereas household nutritional quality available was assessed based on dietary diversity and compliance with the household calorie requirements, percentage of food expenditure, and potential confounders. We used the Student's t-test, analysis of variance (ANOVA), linear regression, and the Wald test to assess the interaction effect. Households with adequate total/partial nutritional quality available by area were found to spend, on average, USD 2.00 more in urban than in rural areas and, by year, they presented 7.1% more percentage of food expenditure in 2020 than in 2019. Despite associations existing between nutritional quality available and total food expenditure by year and study area, the effect modification was only present by study area. In multivariable model, households with adequate total/partial nutritional quality available consistently presented a lower total food expenditure by year, with a lower total food expenditure in urban areas. An inverse relationship was found between nutritional quality available and total food expenditure, in contrast to the direct relationship of studies assessing dietary cost and nutritional quality. Our results reflect the nutritional deficit in the food purchases of Peruvian households.


Resumen: Las evidencian existentes indican una relación directa entre la calidad nutricional y el gasto con alimentos. Sin embargo, los gastos son muy susceptibles a los cambios. Por otro lado, hay pruebas limitadas sobre la calidad nutricional de los alimentos domésticos disponibles. El objetivo de este estudio fue evaluar la relación entre la calidad nutricional disponible y el gasto total en alimentos en los hogares peruanos, y si hubo diferencias por área (urbana y rural) y entre los años de la pandemia del COVID-19. Para ello, se utilizó la Encuesta Nacional de Hogares del Perú (ENAHO) de 2019 y 2020. Se evalúo el gasto total en alimentos en dólares estadounidenses por día, la calidad nutricional disponible por hogar basado en la diversidad dietética y el cumplimiento de los requisitos calóricos por hogar, teniendo en cuenta el porcentaje de gasto alimentario y los posibles factores de confusión. La prueba t de Student, el análisis de varianza (ANOVA), la regresión lineal y la prueba de Wald se utilizaron para evaluar el efecto de interacción. Se encontró que los hogares con la calidad nutricional disponible total/parcial adecuada por área gastan en promedio USD 2,00 más en áreas urbanas que en áreas rurales, y que por año tuvieron el porcentaje de gasto alimentario 7,1% más grande en 2020 que en 2019. Si bien hubo una asociación entre calidad nutricional disponible y gasto total en alimentos por año y área de estudio, la modificación del efecto solo estuvo presente por área de estudio. En el modelo multivariable, los hogares con la calidad nutricional disponible total/parcial adecuada tuvieron consistentemente un gasto total en alimentos más bajo por año, de la misma manera que en áreas urbanas. Se encontró una relación inversa entre calidad nutricional disponible y gasto total en alimentos en contraste con la relación directa de los estudios que evaluaron el costo de la dieta y la calidad nutricional. Los resultados apuntan al déficit nutricional en las compras de alimentos de los hogares peruanos.


Resumo: Evidências revelam uma relação direta entre a qualidade nutricional e os gastos com alimentação. No entanto, essas despesas são altamente suscetíveis a mudanças. Por outro lado, há uma limitação de evidências sobre a qualidade nutricional dos alimentos domésticos disponíveis. O objetivo deste estudo foi avaliar a relação entre a qualidade nutricional disponível e o gasto total com alimentos em domicílios peruanos, e se havia diferenças por área (urbana e rural) e entre os anos da pandemia de COVID-19. Para isso, foi utilizada a Pesquisa Nacional de Domicílios do Peru (ENAHO) de 2019 e 2020. Foram avaliados o gasto total com alimentos em dólares americanos por di e a qualidade nutricional disponível domiciliar com base na diversidade dietética e no cumprimento das necessidades calóricas domiciliares, considerando o percentual de gasto com alimentos e potenciais fatores de confusão. Utilizou-se o teste t de Student, a análise de variância (ANOVA), a regressão linear e o teste de Wald para avaliar o efeito de interação. Os domicílios com a qualidade nutricional disponível total/parcial adequada por área gastaram, em média, USD 2,00 a mais nas áreas urbanas do que nas rurais e tiveram um percentual de gasto com alimentos 7,1% maior em 2020 do que em 2019. Embora tenha sido encontrada uma associação entre a qualidade nutricional disponível e o gasto total com alimentos por ano e área de estudo, a modificação do efeito só estava presente por área de estudo. No modelo multivariável, os domicílios com a qualidade nutricional disponível total/parcial adequada apresentaram consistentemente um gasto total com alimentos menor por ano, assim como em áreas urbanas. Foi encontrada uma relação inversa entre a qualidade nutricional disponível e o gasto total com alimentos, em contraste com a relação direta dos estudos que avaliaram o custo da dieta e a qualidade nutricional. ABSTRACT

El inicio de buenos hábitos alimenticios en el aspecto nutricional contribuye en el desarrollo del niño escolar, evitando con ello, la anemia la cual se estima que posee un impacto a nivel mundial de 600 millones de niños que padecen de esta enfermedad según datos registrados por la Organización Mundial de la Salud. Con este estudio se busca demostrar los hábitos alimenticios, calidad nutricional y concentración de hierro sérico en estudiantes con anemia por deficiencia de hierro en el Cantón Jipijapa en Ecuador. La metodología empleada en el análisis del estudio fue de tipo descriptiva observacional, de corte transversal. Para ello, se aplicó un muestreo no probabilístico voluntario, se contó con la participación de 63 escolares del Cantón con previa autorización. Entre los resultados se encontraron que en los 63 escolares predomina el consumo diario (76,4%) en los hábitos alimenticios, mientras tanto que en la calidad nutricional se observó poco saludable (24 y 37 ME) en ciertos alimentos necesarios para el consumo estudiantiles en los rangos establecido, en la anemia se obtuvo un resultado de (10,2%) de escolares con anemia, mientras que para la deficiencia de hierro el (11,1%) de los niños. Se concluye que en los escolares es prevalente los malos hábitos alimenticios, sin embargo, hay casos en los que escolares muestran anemia con deficiencia de hierro y escolares sin anemia con déficit del mismo lo que es elemental las practicas alimenticia tanto en los hábitos como en la calidad nutricional.


The initiation of good nutritional eating habits contributes to the development of school children, thus avoiding anemia, which is estimated to have a worldwide impact of 600 million children suffering from this disease according to data recorded by the World Health Organization. This study seeks to demonstrate the dietary habits, nutritional quality and serum iron concentration in students with iron deficiency anemia in the Jipijapa Canton in Ecuador. The methodology used in the analysis of the study was descriptive observational, cross-sectional. For this purpose, a voluntary non-probabilistic sampling was applied, with the participation of 63 schoolchildren from the Canton with previous authorization. Among the results, it was found that in the 63 schoolchildren there was a predominance of daily consumption (76.4%) in eating habits, while in nutritional quality, unhealthy was observed (24 and 37 ME) in certain foods necessary for student consumption in the established ranges, in anemia a result of (10.2%) of schoolchildren with anemia was obtained, while for iron deficiency (11.1%) of the children. It is concluded that bad eating habits are prevalent in schoolchildren, however, there are cases in which schoolchildren show anemia with iron deficiency and schoolchildren without anemia with iron deficiency, which is elementary in the nutritional habits as well as in the nutritional quality.


O início de bons hábitos alimentares no aspecto nutricional contribui para o desenvolvimento das crianças em idade escolar, evitando assim a anemia, que se estima ter um impacto mundial de 600 milhões de crianças que sofrem desta doença, segundo dados registrados pela Organização Mundial da Saúde. Este estudo procura demonstrar os hábitos alimentares, qualidade nutricional e concentração sérica de ferro em estudantes com anemia ferropriva no Cantão de Jipijapa, no Equador. A metodologia utilizada na análise do estudo foi descritiva, observacional e transversal. Para este fim, foi aplicada uma amostragem voluntária não-probabilística, com a participação de 63 crianças escolares do cantão com autorização prévia. Entre os resultados, verificou-se que nas 63 crianças em idade escolar havia uma predominância do consumo diário (76,4%) nos hábitos alimentares, enquanto que na qualidade nutricional, observou-se uma deficiência alimentar pouco saudável (24 e 37 EM) em certos alimentos necessários para o consumo dos alunos nas faixas estabelecidas, na anemia foi obtido um resultado de (10,2%) das crianças em idade escolar com anemia, enquanto que na deficiência de ferro (11,1%) das crianças foram encontradas deficiências. Conclui-se que os maus hábitos alimentares são predominantes em crianças em idade escolar, porém, há casos em que as crianças em idade escolar apresentam anemia com deficiência de ferro e crianças em idade escolar sem anemia com deficiência de ferro, razão pela qual é essencial melhorar as práticas alimentares tanto em termos de hábitos alimentares quanto de qualidade nutricional.

The majority of Moroccan varieties are not characterized for their chemical, biochemical and quality properties. The aim of this work was to assess the chemical composition of 17 varieties of Moroccan date fruits (Phoenix dactylifera L.) and to determine their nutritive components. The analysis showed that the dates are rich in sugars (51.80-87.98%), they contain low concentration of proteins (1.09-2.80%) and lipids (0.16-0.39%). The predominant mineral is potassium (1055.26-1604.10 mg/100 g DW). Moreover, they contain high concentrations of malic acid (69.48-495.58 mg/100 g (DW)), oxalic acid (18.47-233.35 mg/100 g DW) and tartaric acid (115.70-484.168 mg/100 g DW). These results suggest that the date fruit are nutritious and can be an excellent source for human nutrition and health benefits.

A maioria das variedades marroquinas não se caracteriza por suas propriedades químicas, bioquímicas nem de qualidade. O objetivo deste trabalho foi avaliar a composição química de 17 variedades de frutos de tâmara marroquina (Phoenix dactylifera L.) e determinar seu valor nutritivo. A análise mostrou que as tâmaras são ricas em açúcares (51,80-87,98%) e contêm baixa concentração de proteínas (1,09-2,80%) e lipídios (0,16-0,39%). ABSTRACT The present study aims to establish the fatty acid profile of a variety of traditional foods consumed regularly in Paraguay. Thirty-two high-lipid content foods were evaluated by gas chromatography coupled with a flame ionization detector (GC-FID). Meat and dairy products were found to present high levels of saturated fatty acids, and this led to an increase in the atherogenicity and thrombogenicity indices of these products. Among the monounsaturated acids evaluated, oleic acid (18:1n-9c) was mainly found in olives (71.7%) and chipa (62.7%), which had been industrially prepared with the addition of oleic acid. Milk-based ice cream (5.1%) and chipa guazú (3.8%) presented the highest content of trans fatty acids. The n-6/n-3 fatty acids ratio obtained for the traditional sopa Paraguaya and empanada (fried pasty) was higher than 37:1; this can be attributed to the addition of soybean and corn oils in the preparation of these foods. The data evaluated and presented in this study can contribute toward the improvement of eating habits among the Paraguayan population, as well as help combat the risk factors commonly associated with bad eating habits and chronic health issues.


RESUMEN El presente estudio tuvo como objetivo establecer los perfiles de ácidos grasos de una variedad de alimentos tradicionales que se consumen regularmente en Paraguay. Se evaluaron treinta y dos alimentos con alto contenido de lípidos mediante cromatografía de gases acoplada a detector de ionización de llama (GC-FID). Los productos cárnicos y lácteos presentaron un elevado nivel de ácidos grasos saturados, aumentando los índices de aterogenicidad y trombogenicidad. Entre los monoinsaturados, el ácido oleico (18: 1n-9c) se encuentró principalmente en aceitunas (71,7%) y chipa (62,7%), este último preparado industrialmente por adición de ácido oleico. En cuanto al contenido de ácidos grasos trans, los valores más altos se encontraron en los helados a base de leche (5,1%) y chipa guazú (3,8%). Los valores de la relación n-6 / n-3 fueron superiores a 37:1 en sopa paraguaya y empanada (frita) debido a la adición de aceite de soja y maíz utilizado en la preparación de alimentos. Los datos evaluados y presentados en este estudio pueden contribuir a la mejora de los hábitos alimentarios de la población paraguaya, así como ayudar a combatir los factores de riesgo comúnmente asociados con los malos hábitos alimentarios y los problemas crónicos de salud.

ABSTRACT: The objective of this study is to evaluate the composition, nutritional aspects and sensory analysis of the dovyalis jam. Dovyalis fruits were harvested from 4-year-old plants in the orchard of the Unioeste Experimental Farm. They were collected in the morning in polyethylene boxes, when they were ripe and with a purple coloration from the epicarp, being immediately transported to the Laboratory to prepare the jams. After fruits arrival, they were selected by size, color and weight and then sanitized in running water and the cups of the fruits were removed. The sensory evaluations of the jam samples were performed in a randomized fashion, with 30 volunteer tasters. The tasters were previously advised to evaluate the acceptance of the jams and their purchase intentions. Fruits in natura and dovyalis jam are sources of vitamin C. Dovyalis fruits can be used in the processing, due to its acidity. The jam prepared with dovyalis fruits without epicarp and endocarp, and less sugar, was more appreciated by the tasters.


RESUMO: Objetivou-se com o presente trabalho avaliar a composição, aspectos nutricionais e análise sensorial da geleia de dovyalis. Frutos de dovyalis foram colhidos de plantas de quatro anos, no pomar da Fazenda Experimental da Unioeste. Estes, foram coletados de manhã, em caixas de polietileno, quando encontravam-se maduros e com coloração arroxeada do epicarpo, sendo imediatamente após, transportados ao laboratório, para o preparo das geleias. Após a chegada dos frutos, estes foram selecionados por tamanho, coloração e peso e, em seguida, higienizados em água corrente e retirados os cálices dos frutos. As avaliações sensoriais das amostras de geleia foram realizadas de forma casualizada, com 30 provadores voluntários. Os provadores foram previamente orientados a avaliarem a aceitação das geleias e suas intenções de compra. Frutos in natura e geleia de dovyalis são fontes de vitamina C. Frutos de dovyalis podem ser usados no processamento, devido sua acidez. A geleia preparada com frutos de dovyalis sem epicarpo e endocarpo, e menor quantidade de açúcar, foi mais apreciada pelos provadores.

ABSTRACT

RNA interference (RNAi) is a powerful tool for gene silencing in different organisms, including plants. It isbeing used in functional genomics to decipher the function of genes. This technology has also witnessed avariety of potential applications in agriculture for crop improvement, including the development of crops forresistance against biotic (weeds, pathogens, insect pests and nematode parasites) and abiotic stresses (drought,high and low temperature, etc.), nutritional quality improvement, healthier oils, delayed ripening, male sterility,modification of flowering time and flower colour, alteration of plant architecture, enhancement of secondaryproducts, and removal of allergens and toxins. RNAi has several advantages over traditional transgenicapproaches as genetically modified RNAi plants do not contain transgene protein, however the risk assessmentof these plants should be examined to rule out any off-target effects.

Resumen En los sistemas ganaderos de trópico alto colombiano, la estacionalidad forrajera, y el déficit energético de las dietas en bovinos, son las mayores limitantes para potencializar la productividad animal. El objetivo del estudio fue evaluar la concentración de sólidos solubles, en dos especies arbustivas perennes (Tithonia Diversifolia (T.d) y Sambucus Nigra (S.n), edad: 60 días (d) y dos variedades de ryegrass (Lolium perenne) Columbia y Samson (edad: 32d) en el Centro de investigación Obonuco de Agrosavia (Pasto-Nariño). Los datos fueron analizados bajo un diseño completamente al azar con arreglo de medida repetida tomando como unidad experimental las parcelas de evaluación tanto en las arbustivas como en las gramíneas. Se midió la concentración de sólidos solubles (%Ss), en tres horarios (7:30 a.m., 11:30 a.m. y 3:00 p.m.), la composición nutricional y producción de biomasa; para el análisis se utilizó el software R V. 3.5.1 a través de ANAVA y pruebas de comparación de medias (tukey<0,05). Los datos indicaron mayor concentración (p<0,05) de Ss para S.n (12,5%) en comparación con las demás especies. Los mayores valores numéricos de Ss en todas las especies se presentaron en el horario de las 3:00 p.m. y los menores a las 7:30 a.m. A nivel nutricional hubo diferencia (p<0,05) para los carbohidratos no estructurales (CNE), siendo mayores para S.n (29,5%) respecto a T.d (25,4%). La producción de biomasa (MS/t/ ha/año), fue mayor (p<0,05) para T.d (22,8 t) respecto a S.n (11,4 t). Los resultados obtenidos de Ss para los recursos forrajeros evaluados son de gran importancia para estimar el valor energético de estos forrajes en alimentación animal.


Abstract In the livestock systems of the Colombian high tropics, the seasonality of forage, and the energy deficit of the diets of cattle, are the greatest limitations to the potential of animal productivity. The objective of the study was to evaluate the concentration of soluble solids in two perennial shrub species (Tithonia diversifolia and Sambucus nigra, age: 60 days (d) and two ryegrass varieties (Lolium perenne) Columbia and Samson (age: 32 d) at the Obonuco Research Center of Agrosavia (Pasto-Nariño). The data were analyzed under a completely randomized design with a repeated measurement arrangement taking as an experimental unit the evaluation plots in both shrubs and grasses. Soluble solids concentration (%Ss), nutritional composition and biomass production were measured in three time periods (7:30 a.m., 11:30 a.m. and 3:00 p.m.). The analysis was performed using R V. 3.5.1 software through ANAVA and mean comparison tests (tukey<0.05). Data indicated higher concentration (p<0.05) of Ss for S.n (12.5%) compared to the other species. The highest numerical values of Ss in all species were presented at 3:00pm and the lowest at 7:30 a.m. At a nutritional level there was a difference (p<0.05) for non-structural carbohydrates (NSC), being higher for S.n (29.5%) than T.d (25.4%). The production of biomass (MS/t/ha/year), was higher (p<0.05) for T.d (22.8 t) with respect to S.n (11.4 t). The results obtained from Ss for the fodder resources evaluated are of great importance for estimating the energy value of these fodder products in animal feed.


Resumo Nos sistemas pecuários do alto trópico colombiano, a sazonalidade das forragens e o déficit energético das dietas do gado são as maiores limitações para o potencial de produtividade animal. O objetivo do estudo foi avaliar a concentração de sólidos solúveis em duas espécies de arbustos perenes (Tithonia diversifolia e Sambucus nigra, idade: 60 dias (d) e duas variedades de azevém (Lolium perenne) Columbia e Sansão (idade: 32 d) no Centro de Pesquisa Obonuco de Agrosavia (Pasto-Nariño). Os dados foram analisados sob um desenho completamente aleatório com um arranjo de medição repetida tomando como unidade experimental as parcelas de avaliação tanto em arbustos como em gramíneas. A concentração de sólidos solúveis (%Ss), composição nutricional e produção de biomassa foram medidas em três períodos de tempo (7:30 h, 11:30 h e 15:00 h). A análise foi realizada utilizando o software RV. 3.5.1 através do ANAVA e testes de comparação de médias (tukey<0,05). Os dados indicaram maior concentração (p<0,05) de Ss para S.n (12,5%) em comparação com as outras espécies. Os valores numéricos mais altos de Ss em todo as espécies foram apresentados às 15:00 h e os mais baixos às 7:30 h. A nível nutricional houve diferença (p<0,05) para carboidratos não estruturais (NSC), sendo maior para S.n (29,5%) do que para T.d (25,4%). A produção de biomassa (MS/t/ha/ano), foi maior (p<0,05) para T.d (22,8 t) em relação ao S.n (11,4 t). Os resultados obtidos com os Ss para os recursos forrageiros avaliados são de grande importância para estimar o valor energético desses produtos forrageiros na alimentação animal.

ABSTRACT

The increased world population has raised the demand for animal proteins, forcing livestock to become productive, efficient, and environmentally sustainable. This study aimed to assess the effect of weed coexistence on productivity, nutritional quality, and potential production of greenhouse gases (GHG) by Convert HD364 grass (Urochloa hibrida cv. Mulato II) under pasture renovation conditions. The experiment was carried out in a randomized block design with four replications and treatments consisting of eight coexistence periods: 0, 15, 30, 45, 60, 75, 90, and 120 days after seedling emergence. Phytosociological assessments were performed in the weed community at the end of each coexistence period. The Convert HD364 grass was assessed for the morphological and chemical-bromatological parameters and for the GHG emission potential. Productivity, nutritional quality, and energy value of the Convert HD364 grass decreased proportionally with the increased period of weed coexistence. The non-coexistence with weeds results in a better in vitro digestibility of organic matter and, consequently, decreases the potential of GHG emission by the dry matter of the Convert HD364 grass.


O aumento da população mundial tem elevado a demanda por proteínas de origem animal, obrigando a pecuária a tornar-se produtiva, eficaz e ao mesmo tempo sustentável. O objetivo deste estudo foi avaliar o efeito da convivência de plantas daninhas sobre a produtividade, qualidade nutricional e potencial de produção de gases de efeito estufa (GEE) pelo capim Convert HD364 (Urochloa hibrida cv. Mulato II) em condição de renovação de pastagem. O experimento foi instalado no delineamento experimental em blocos casualizados, com quatro repetições e os tratamentos constituídos por oito períodos de convivência: 0, 15, 30, 45, 60, 75, 90 e 120 dias após a emergência das plântulas. Avaliações fitossociológicas foram realizadas na comunidade infestante ao final de cada período de convivência. O capim Convert HD364 foi avaliado quanto aos parâmetros morfológicos, químico-bromatológicos e quanto ao potencial de emissão de GEE. Verificou-se que a produtividade, a qualidade nutricional e o valor energético do capim Convert HD364 diminui proporcionalmente ao aumento do período de convivência com as plantas daninhas. A não convivência com plantas daninhas condiciona melhor digestibilidade in vitro da matéria orgânica e, consequentemente, diminui o potencial de emissão de GEE pela matéria seca do capim Convert HD364.

RESUMEN Introducción: El NutriScore es una herramienta diseñada con el objetivo de simplificar la información que aporta el etiquetado nutricional de los alimentos. Clasifica los alimentos en cinco colores que van desde el verde (más saludable) hasta el rojo (menos saludable). Estos colores están asociados a cinco letras (A/B/C/D/E). Los estudiantes universitarios pasan muchas horas en las facultades y tienen un consumo elevado de snacks y refrescos Objetivos: Calcular el NutriScore de los alimentos y bebidas disponibles en las máquinas expendedoras de las facultades de la Universidad Complutense de Madrid y obtener datos de los hábitos de consumo de los estudiantes de dicha universidad. Material y Métodos: El estudio ha sido realizado en 16 facultades y la biblioteca universitaria analizando los alimentos y bebidas de las máquinas expendedoras de dichas facultades en marzo de 2019. Se calculó la puntuación de cada uno y según la puntuación obtenida se clasificaron en una de las cinco categorías. 146 estudiante rellenaron una encuesta sobre la frecuencia de consumo y tipo de productos preferidos de las máquinas expendedoras. Resultados: Se clasificaron 143 alimentos y 53 bebidas que estaban disponibles en máquinas expendedoras. Los alimentos se distribuyeron: A 4,2%, B 4,2%, C 21,6%, D 53% y E 47% y las bebidas: A 1,9%, B 9,4%, C 13,2%, D 35,9% y E 39,6%. Los estudiantes consumen algún producto de las maquinas expendedoras fundamentalmente cuando tienen hambre, en momentos entre horas y eligiendo agua como primera opción seguido de refrescos azucarados como bebidas y bollería industrial seguido de patatas fritas como snacks más consumidos Conclusión: Aunque la universidad debería desarrollar una función en la promoción de un estado de vida saludable, las máquinas expendedoras de las facultades ofrecen un número muy elevado de productos con baja calidad nutricional.


ABSTRACT Introduction: NutriScore is a tool designed with the aim of simplify the information of the nutritional composition obtained from the labelling. It classify foods in five colors ranging from green (healthier) to red (less healthy). These colors are associated with five letters (A/B/C/D/E). University students spend many hours in faculties and have a high consumption of snacks and beverages. Objective: We aimed to examine the nutritional value of foods sold in vending machines of the Complutense University of Madrid, by calculating the nutriscore and to obtain data of the snacking habits of the students of this university. Methods: The study was conducted in sixteen universities and in the university library of the Complutense University of Madrid. One hundred and forty six undergraduate university students volunteered to complete a questionnaire to assess frequency of consumption and snack choices of vending machines. Results: We analized 143 snacks and 53 beverages. Snacks were: A 4,2%, B 4,2%, C 21,6%, D 53% y E 47% and beverages A 1,9%, B 9,4%, C 13,2%, D 35,9% y E 39,6%. The students use them when they are hungry and between meals. Water was the first option followed by sugary soft drinks as beverages and processed baked goods followed by chips as more consumed snacks. Conclusión: Although the university should play a role in promoting a healthy lifestyle, the vending machines of the faculties offer a very high number of products with low nutritional quality. group, we can conclude that DTC in acromegaly does not have a worse evolution.

ABSTRACT Nowadays consumers are more concerned about food quality as well as how food is produced. Moreover, consumer demand for more natural, nutritious, safer to eat, and environmentally sustainable food has drawn attention to alternative breeding systems, such as a free-range system. Hens' eggs represent a rich source of important nutrients, including lipids and carotenoids. A detailed characterization of the nutritional and lipid profile of free-range chicken eggs from family farms was carried out. The chemical composition of the free-range egg yolks confirmed the advantages of this farming system, as a relevant source of unsaturated fatty acids and carotenoids, functional compounds in the human diet. These findings can help improve income generation, food supplementation, and consolidation of the family farming system.


RESUMEN Cada vez más los consumidores se preocupan por la calidad de los alimentos, así como tambien de como ellos son producidos. Además, la demanda de los consumidores por alimentos más naturales, nutritivos, más seguros para el consumo y ambientalmente sostenibles ha llamado la atención a sistemas de cría de alternativa, como el sistema de gallina del campo. Los huevos de gallinas representan una fuente rica de sustancias nutritivas importantes, incluyendo lípidos y carotenoids. Fue realizada una caracterización detallada de los nutrientes y del perfil lipídicos de huevos de gallinas del campo de agricultores familiares. La composición química de yemas de gallinas del campo confirmó las ventajas de este sistema de producción, como una fuente importante compuestos funcionales como ácidos grasos insaturados y carotenoides, en la dieta humana. Además, estos hallados pueden ayudar a mejorar la generación de ingreso, la suplementación de alimentos y la consolidación de sistema de agricultura familiar.

ABSTRACT

RESUMEN La evaluación de las praderas destinadas a ganadería es esencial para la productividad de los animales. Los datos de sensores multiespectrales remotos aerotransportados (SM) permiten construir índices de vegetación (VI, por sus siglas en idioma inglés) y relacionarlos con características fisiológicas y biofísicas de las pasturas. El objetivo fue evaluar VI para la estimación de la cantidad y calidad de pasto kikuyo en sistemas lecheros, del norte de Antioquia, Colombia. Se calcularon 10 diferentes VI, con 168 muestras de pasto kikuyo. Las muestras fueron pesadas, para estimar la biomasa verde (BV) y analizadas por espectroscopia del infrarrojo cercano, para los contenidos de proteína bruta (PB), fibra en detergente neutro (FDN) y fibra en detergente ácido (FDA). Los datos, se analizaron usando componentes principales (CP) y modelos aditivos generalizados suavizados. Las variables que más contribuyeron a la formación de la primera componente principal (CP1) fueron el índice de vegetación de diferencia normalizada (NDVI), el índice de vegetación simple (RVI), el índice de vegetación de diferencia normalizada verde (GNDVI), el índice clorofílico verde (Clg) y la BV del pasto kikuyo. Para la segunda componente principal (CP2) fueron el índice de vegetación de diferencia normalizada borde del rojo (RNDVI), el índice borde del rojo de clorofila (Clrg) y PB, FDN y FDA del pasto kikuyo. La BV fue explicada por el NDVI y PB por el RNDVI. La estimación obtenida para FDN y FDA del pasto kikuyo no fueron precisas.


ABSTRACT The evaluation of grazing lands is essential to improve livestock productivity. Data from multispectral airborne sensors allow calculating vegetation indexes (VI) and relating them to physiological and biophysical characteristics of the pastures. The objective of this study was to evaluate the usefulness of VI to estimate the quantity and quality of Kikuyu grass in dairy farms of northern Antioquia, Colombia. We calculated 10 different VI using 168 samples of Kikuyu grass. The samples were weighted to estimate green biomass (BV) and analyzed by near infrared spectroscopy for the contents of crude protein (PB), neutral detergent fiber (FDN) and acid detergent fiber (ADF). Data were analyzed using principal components (CP) and smoothed generalized additive models. The variables that contributed most to the formation of the first principal component (CP1) were the Normalized Difference Vegetation Index (NDVI), the Simple Vegetation Index (RVI), the Normalized Difference Vegetation Green Index (GNDVI), the Green Chlorophyll Index (Clg) and the BV of Kikuyu grass. The mayor contributors to the second principal component (CP2) were the Normalized Red-Edge Vegetation Index (RNDVI), the Red-Edge Chlorophyll Index (Clrg), and the PB, NDF and FDA of Kikuyu. The NDVI explained the BV, and the RNDVI explained the PB. The FDN and FDA estimations in Kikuyu were not precise.

Aims: Malnutrition among all ages is still a persistent problem in India, especially in areas where the poor largely depend on rice and wheat staples with limited access to diverse diets using underutilized foods. This study was conducted to nutritionally enhance traditional food products like roti and lapsi utilizing suitable composite flours based on amaranth, soybean and wheat without affecting their sensory quality. Study Design: Different combinations of amaranth, soybean and wheat flours were made to suit the quality characteristics of roti and lapsi. Place and Duration of Study: Department of Foods and Nutrition, G. B. Pant University of Agriculture & Technology, Pantnagar (India), between January and June 2016. Methodology: The sensory evaluation of food products and estimation of nutritional composition of composite flours was done using standard procedures. Results: The composite flours having 25% amaranth, 15% soybean and 60% wheat flour and 25% amaranth, 10% soybean and 65% wheat flour were found to be most acceptable sensorially and were significantly superior to their control counterparts for protein, ash, fibre, carbohydrate calcium and iron content (p=.05). Conclusion: Roti made from amaranth and soybean incorporated composite flours with better protein quality and low available carbohydrates and physiological energy almost same as control would be better diet alternative to diabetic and overweight patients whereas lapsi may be effectively used as supplementary food. Many other traditional food products like laddoo, halwa, puri, parantha, burfi etc. may also be made from such composite flours.

Resumo O objetivo foi analisar o investimento financeiro para a aquisição de alimentos destinados à alimentação escolar em um município no Sul do Brasil. As licitações, as chamadas públicas e a prestação de contas do PNAE foram analisadas por meio das variáveis: I) valores de complementação financeira do município; II) percentual de recursos destinado à compra de alimentos da Agricultura Familiar (AF) e aos alimentos Recomendados, Restritos, Proibidos e outros. Comparação de proporções foi o teste utilizado para identificar diferenças entre investimentos. A complementação financeira do município denotou 65% do total. O valor total empregado para a aquisição de alimentos foi: 65,5% Recomendados, 27,9% Restritos, 6,5% Outros e 0% Proibidos. Os gastos com alimentos Recomendados foram maiores (p < 0,001) do que com os demais grupos. A AF forneceu exclusivamente alimentos Recomendados, representando 12,1% do investimento total (municipal e federal) e 29,5% dos recursos federais. A compra direta da AF contribuiu para aquisição de alimentos Recomendados. A complementação financeira do município não foi direcionada à AF, podendo comprometer o potencial do programa de alimentação escolar na promoção de sistemas agroalimentares sustentáveis, saudáveis e locais.


Abstract This study aimed to analyze the financial investment used for the procurement of food for the Brazilian National School Food Program (PNAE) in a city in the South of Brazil. The bidding process, the public calls and accountability reports of the PNAE were analyzed in the following variables: I) municipal financial complementation values; II) percentage of resources used to purchase foods from Family Farmer (FF), and Recommended, Restricted, Prohibited and others foods. The comparison of proportions was employed as a test to identify differences between investments. The municipal financial complementation was 65% of the total. The total amount used to purchase foods was distributed as follows: 65.5% for the Recommended, 27.9% for the Restricted, 6.5% for the Other and 0% for the Prohibited. The expenditure on Recommended foods was higher (p < 0.001) compared to the remaining groups. FF provided only Recommended foods, representing 12.1% of total (municipality and federal) expenditure and 29.5% of total federal funds. The direct purchase from FF contributed to the purchase of recommended foods. The municipal financial complementation was not geared to FA, which can compromise the potential of the school food program to promote healthy and sustainable food systems.

ABSTRACT

The dietary behavior of immigrants starts changing upon their arrival in a new country. We evaluated changes in dietary quality of Vietnamese women immigrants in Korea and compared dietary quality with that of Korean women. Fifty-six Vietnamese women immigrants and 56 age-matched Korean women were recruited. Dietary quality were assessed using index of nutritional quality (INQ) and diet quality index-international (DQI-I). Dietary habits were assessed according to 4 dietary behaviors: a prudent, calorie control, dietary fat control, and sodium or salt control diet. DQI-I scores of Vietnamese immigrants decreased after immigration, especially the moderation score, although the variety score increased. Scores were significantly lower than those of Korean subjects (45.1 vs. 64.5; p < 0.001). Vietnamese women immigrants had significantly poorer nutrient balance and calorie intake control, although their fat and sodium control was better than that of Korean woman (p < 0.001). INQs of protein, niacin, phosphorus, iron, zinc were lower in immigrants who had lived longer in Korea than more recent immigrants (p < 0.05). Lower INQs of protein, fiber, vitamin A, B1, B6, C, folate, and phosphorus were related to higher body fat in Vietnamese immigrants (p < 0.05). In conclusion, dietary quality of Vietnamese immigrants decreased after migration, and dietary intake was inadequate compared with that of Korean women. In addition, diet quality of Vietnamese immigrants decreased with length of residence in Korea. There was a negative correlation between diet quality and body fat percent in Vietnamese women immigrants. Findings from this study may help improve diet quality and prevent obesity in Vietnam women immigrants.

ABSTRACT

Enhancing soybean (Glycine max) oil production is crucial to meet the market demand of vegetable oil. Diacylglycerol acyltransferase (DGAT) catalyzes the final acylation reaction of triacylglycerol (TAG) synthesis, acting as one of the rate-limiting enzymes for oil biosynthesis in plant seeds. Here, a cDNA clone VgDGAT1A encoding the DGAT1 protein was isolated from the high oil plant Vernonia galamensis. VgDGAT1A was specifically overexpressed in soybean seeds, and several high-generation transgenic lines (T7) were obtained by continuous selection. qPCR analysis showed that VgDGAT1A was highly expressed in the mid-development stage (30-45 DAF) of the transgenic seeds. Accordingly, the DGAT enzyme activity in the transgenic seeds was increased by 7.8 folds in comparison with the wild-type controls. Seed oil and starch contents were, respectively, increased by 5.1% (Dry weight) and reduced by 2%-3% in the transgenic soybeans. Importantly, protein content was not significantly different between transgenic and control seeds. Seed weight and germination rate of the transgenic lines exhibited no negative effect. Fatty acid profiling demonstrated that antioxidant oleic acid (C18:1Δ9) content in the transgenic seed oil was elevated by 8.2% compared to the control, and correspondingly, easily-oxidized linoleic acid (C18:2Δ9,12) and linolenic acid (C18:3Δ9,12,15) were decreased by 6% and 2% respectively. Taken together, seed-specific overexpression of an exogenous VgDGAT1A gene can break the negative linkage of oil and protein contents in soybean seeds, indicating that engineering of this highly-active DGAT enzyme is an effective strategy to improve oil yield and nutritional value in oilseeds.
